Pork Meatball Banh Mi

Okay so this is the first post I’m making in retrospect. I made this meal back in early January.

It took me a seriously long time to find daikon. I really couldn’t even pronounce it. Went to 4 of the strangest markets i’ve ever been in to find it. It was pretty awesome actually. After I spent all day looking for daikon I went to Giant for the rest of the ingredients. Unfortunately, Giant didn’t have ground pork and I was too exhausted to go on another adventure to figure out where to get some so I just substituted with ground beef. Later, my coworker said this was a huge mistake.

Here’s all of the ingredients laid out:

So, the first part of the recipe is the Hot Chili Mayo. Just chop the green onions and mix with the other ingredients in a bowl. Then cover the bowl and put it in the refrigerator.

The next part is the meatballs. Chop up the green onions, the garlic, and the basil and add all of it to a large mixing bowl. Also add in all of the other ingredients for this part of the recipe.

Add in the ground beef and knead it until the ingredients are distributed evenly.

Take the meat out in clumps that are about 1 inch in diameter, roll it into a ball, and place on a baking sheet. You’re supposed to keep this stuff in a fridge overnight but i was hungry and out of time so i just threw it in the freezer until it seemed cold enough.

The next part of the meal is the sandwich. They are topped with the daikon and carrots mixture. To make it, grate the carrots and the daikon into a bowl and add the rest of the ingredients for this section. Cover and let sit for about an hour.

When the carrots and daikon are ready, take the meatballs out of the fridge and begin searing them in a large frying pan. Remember to add sesame oil to the pan before searing.

Once seared, place in the oven until cooked (use a thermometer to measure 165F).

To make the rest of the sandwich, cut a baguette down the center and pull out most of the bread. Also cut up as many jalapenos as you want.

Add the hot chili mayo spread to the sandwich first.

Add the peppers and some chopped cilantro next.

When the meatballs are finished, add them on top and then top with the pickled vegetables.

This meal took a crazy amount of time to collect ingredients, prepare the stages, and actually cook.

If I were to do it again, I might try skipping the fermented vegetables. It smelled horribly and didn’t add too much to the flavor. I also would probably lay off the jalapenos a little. Also, should spend some time actually trying to get ground pork. I also think I may have used the wrong bread. With this meal, the preparation is totally key.

That being said, it was still an amazing sandwich and I’m absolutely going to have it another try.
